Just did grocery shopping. I was APPALLED at the cost since I only bought enough to make two dishes.

Then I had to shake myself. Because I am not cooking two small meals. I am cooking two humongous dishes to take apart and freeze so that we can eat better when busy. It's probably 2 weeks worth of main dishes, for pity's sake, and enough veggies in for maybe 1/4 to 1/2 of those meals. Of course it cost more than my usual 3-6 serving stuff does.

I am SUCH a ditz some days.

My mom used to do that. She'd make a huge pot of spaghetti sauce or chili, or a huge pile of hamburger patties, and put almost all of it in the freezer in meal-sized packages. Then she'd haul them out over the next month or two.

Come to think of it, that wouldn't be such a bad idea for me.

That's what we're going to start doing.
While Stan was home, he'd make too much for one dinner and then freeze a single dinner's worth.
When he left, I barely had to set foot out of the house, and it was really good.
